Viennese Waltz – festive, noble and with a lively pelage presents this sparkling wine.

The grapes come from Wiener Gemischter Satz vineyards and are pressed “whole bunch” without the use of any further technologies. This processing of the whole grapes guarantees the finest musts for further vinification into sparkling wine. Traditional bottle fermentation and at least 24 months of bottle ageing in traditional dark cellars characterize this noble sparkling wine.

Grapevarieties

Cultivated as Gemischter Satz:

Weissburgunder, Riesling, Chardonnay, Welschriesling, Grüner Veltliner and other varieties.

Vinification

Selective hand-picked grapes in small boxes, 100% whole-chluster pressing with particular low pressure.

Followed by insect infestation through traditional bottle fermentation according to „Méthode Champenoise“. Aging on the lees for 24-months in traditional dark cellar.

Tastingnote

Pale straw yellow, notes of fresh citrus flowers, greep apple and a touch of brioche. Lively and velvety on the palet, noble perlage, structured and refreshing.
