Cabernet Sauvignon

The red Diva – always a fantastic reflexion of the vintage. A grape variety which is not easy to cultivate, but all the more convinces in the glass.

From Bordeaux, the most famous red grape variety has made its way out into the world, not stopping at the vineyards of the Bisamberg.

Since 1998 are we cultivating this grape variety. The first harvest already gave us an idea of the potential of the Cabernet and thus our efforts to gain further vineyards were born. In the year 2001 we were able to lease another vineyard with older Cabernet vines.

The maturation of the wine lasts for over 18 months in the French oak Barrique (50% neu, 50% used). The wine would then be bottled unfiltered, without any mechanical stress of a filter.

Vinification

Selective harvest by hand, destemming without squeezing. Skin contact of approx. 28 days, maceration for 30 months in 300l barrels, followed by assemblage of the tranches in the great wooden barrel. Rest, maceration and integration for another 6 months.

No treatments and unfiltered.

Bright purple, cassis, red berries, mineralic nuances, fine noble wood touch, long

finish.
